When cravings hit, it can fuel inspiration and motivation for delicious healthy culinary creations. Granola has been on my mind, thus rather than buying at the store, which usually contain too much sweetener, and other ingredients I prefer to avoid, I decided to craft my own. 

This granola contains a variety of nuts and seeds, with just a few touches of natural sweetness. The combination results in a blend rich in Zinc, Magnesium and other trace minerals, as well as Vitamin C, Healthy Fats including plant based Omega-3s, Antioxidants, and other Phytonutrients. This collection of ingredients is high in Fiber, Protein and relatively low in Carbohydrates. 

I soaked all the seeds (except for the chia), overnight to reduce phytic acid which can inhibit nutrient absorption. This also begins the sprouting process, which supports ease of digestion and increasing the bioavailability of nutrients.
